3 NINJAS FOOD TRUCK

What began as 3 friends with a vision is now a “go-against-the-grain”, fusion food truck serving up great food in Spokane. Steven Kitchens, Tymen Hoffman, and Michael Anderson have been friends for over 15 years. After school, they went their separate ways for a short while, all working in the food industry, and came back together a few years ago to bring 3 Ninjas to life. With the creation of 3 Ninjas, they are able to do what they love and have a blast while doing it.

3 Ninjas food truck is based out of Spokane and you can find them at around 10 different locations a week. Follow them on Facebook for updates on where they will be parked.
I visited them at the Kendall Yard’s Night Market which runs on Wednesday nights from 4-8 pm until mid October. They serve Fusion cuisine and they proudly break all the rules with their menu. Fusion cuisine combines elements of different culinary tradition. The menu is sporadic but that’s what makes this place so great. They have something for everyone. Rice bowls, Noodle bowls, wraps, fish tacos, all totally random and all totally YUM.

Their #1 best seller is the spicy fire wrap. They marinate the chicken in house-made habanero pepper jelly, drench their onions in buttermilk, then fry them fresh to add a nice crunch. It’s truly an explosion of flavors and textures wrapped in a warm tortilla. The sweet coleslaw helps balance out some of the heat in this FLAMING HOT burrito. We sat next to a sweet couple who was talking to us about their food and he also ordered the spicy fire wrap. He was joking that he was trying to act tough but this burrito was owning him. So good but so spicy. This wrap is not for the faint of heart. The spicy fire wrap is served with their fresh, thick chips and smoky salsa.

We also tried the Hawaiian Rice Bowl. This dish was sweet and tropical. It started with rice soaked in coconut milk… YES PLEASE. The bowl was topped with grilled chicken, fresh pepper, mushroom, kidney beans, and pineapple with shaved coconut. This bowl came out piping hot and stayed that way until it was gone, which is very impressive because I take a lot of pictures before I eat. We also heard from some customers that their chicken Thai bowl is a must-try.

KENDALL YARD’S NIGHT MARKET

At the Kendall Yard’s Night Market you can find pretty much everything you would expect at a farmers market… and more! They have fruit, vegetables, herbs, cheese, honey, pastured eggs, meat, baked goods, pickles, jams, flowers, plants, etc, etc, etc. Everything sold is “grown, baked, or crafted by the vendors who sell them.
