Pho Van, Vietnamese Bistro, serves my favorite pho and spring rolls in town. It’s authentic Vietnamese food with all the right spices, flavors, and perfect noodle consistency. I know it’s hot outside, but sometimes you have a craving for pho regardless of the temperature. Their pho has a great noodle to meat ratio that keeps us coming back time and time again. I think there is nothing worse than a pho with 80% noodles and 20% meat. In my book, the more meat, the better.  The service here is low-key which adds to the feeling of authenticity. Seat yourself and you will be served quickly then pay at the front counter when you are finished. I am always shocked at how quickly the food comes out after ordering.

I can’t come here without getting their egg rolls and spring rolls. Their peanut sauce is so dang good. It’s perfectly creamy with a good peanut flavor and some crunch on top. Usually we order a large pho and split it between two of us which makes it a pretty cheap date night. The portions are huge. Honestly, you could probably split a small between two people. They cook their noodles perfectly, not soggy and not stiff. They also provide complimentary lime, hoisin sauce, chili flakes, and bean sprouts to add to your pho and I always load mine up with these extras.

If you’re not into hot pho on a hot day, they have a lot of other options to choose from on their menu. They offer all of the typical Vietnamese favorites with some really great chicken entrees for those wanting to ease into Vietnamese food. They are conveniently located on the west side of division just north of downtown. You can come here for a quick meal or stay and enjoy a long dinner. I have tried the chicken pho, shrimp pho, this time we tried the beef pho with a variety of meats, but my favorite is the roasted duck noodle soup. The duck is tender and the broth is sweet and savory while the veggies stay crisp and tender. Pho is such a great mixture of all the consistencies in one meal.
