A vegan restaurant with a rustic vibe, hearty portions, and food that is good for the soul and for the earth… meet Rüt Bar & Kitchen. 

We sat down with Rüt chef and co-owner Josh Lorenzo to talk about this restaurant gem that is new to the Spokane food scene, but has been a vision 10 years in the making. As true locals, former Shadle Park high school classmate and now Rüt co-owner Justin Oliveri & Josh have been flirting with the idea of this place for years.

So, needless to say, we were excited to try out this South Hill vegan sanctuary. The verdict? Rüt leaves your stomach feeling satisfied and happy, the perfect amount of full.

We tried some dishes and drinks that were both visually appealing and tasty. Here’s our rundown:

To Start: House-Made Sodas.

Offering a variety of house-made drinks, our favorite was the sparkling lavender lemonade. 

Thai Ginger Cauliflower Wings:

O M G. Served with a sriracha dipping sauce, these wings had the perfect amount of crunch and a subtle kick. Only $5 during daily happy hour (3 – 5 pm, 9 pm – close), they are something we will be ordering every time we visit.

Rüt Burger

Served with a beyond burger patty, this dish replicates your typical American burger with all the fixin’s.

Mint & Melon Salad

A watermelon and arugula salad with tofu feta and spiced pepitas, this salad was light and refreshing. 

Watermelon Poké Bowl

A creative use of watermelon, this Poke Bowl’s warm jasmine rice had us licking the plate clean. The best alternative for someone who wants a taste of this Poke Bowl craze, but who would rather opt out of raw fish part. 

Truffle Mac

Served with grilled broccolini, coconut bacon bits, bread crumbs, and Aleppo flakes, this is the perfect way to get your comfort food fix, without the stomach ache that typically follows.

To finish off…

Lava Brownie Sundae

Complemented by coconut ice cream, this brownie is drizzled in chocolate and sprinkled with candied nuts. I guarantee you won’t be able to tell it’s vegan!

Next time:

We sampled a variety of yummy offerings at Rüt, but there is still so much we’d like to try. Our personal favorites were the Buffalo-Style Cauliflower Wings and the Watermelon Poké Bowl, but we will definitely be trying out the Beetroot & Pear Salad, Chipotle Peach Tacos, and Coconut Rice Pudding next time too.

As meat-eaters, it was especially enjoyable to experience the creativity weaved into this menu. But, if you’re really wanting something meaty, the Jalapeno Mushroom Burger (made with an impossible patty) is the way to go. It will can fool any meat lover into thinking it’s actually beef.
