WILD SAGE BISTRO – SPRING MENU 2019

When the weather starts to warm up it’s time for the spring menus! One of our favorites, Wild Sage, just released their seasonal menu and we were all for it. Executive Chef Charlie really treated us to a meal we’ll never forget. He’s been cooking for Wild Sage for nine years and counting. In other words, he’s mastered their menu and you can’t go wrong with any of their options!

For starters, we tried the Yukon Taquitos, Hawaiian Style Poke and Pork Belly Crostini. All three dishes were amazing and kept with the fresh spring theme. Our favorite from the three had to be the Yukon Taquitos. These taquitos have been on Wild Sage’s menu for 13 years! The Yukon gold potatoes, white cheddar, chili-lime sauce, avocado and salted cabbage blended perfectly inside a crispy shell.

Next came the salads and soup. Chef prepared us their Spring Harvest Salad and Wild Sage Salad along with a cup of their Northwest Seafood Chowder. 

The spring salad had a Meyer lemon vinaigrette that was to die for and paired perfectly with the spring greens, fresh herbs, sugar snap peas, heirloom radish, feta and toasted pine nuts (yum, right?). 

The Wild Sage salad’s greens were beautifully wrapped in cucumber like a bouquet and topped with goat cheese, toasted Oregon hazelnuts and a sweet/savory huckleberry-balsamic vinaigrette. 

Then we finished with the seafood chowder that was packed full of Alaskan halibut, house smoked Sockeye salmon, clams, peppers, sherry, potatoes herbed cream and Yukon gaufrette. For all you chowder lovers, this one is a MUST.

For the entrees, we were lucky enough to taste three classics with the Wild Sage twist. We started with the Honey-Dijon Chicken which was stuffed with Jarlsberg cheese and topped with a honey-dijon glaze, grilled Kansas City bacon, apple chips and served on top of a bed of seasonal veggies and rosemary-parmesan polenta. This quickly became a favorite for us and we’ll be back for more soon!

Next was the Alaskan Halibut which was pan seared and sat on ancient grains pilaf with Walla Walla sweet onion soubise, dressed peas, pickled rhubarb and seasonal veggies. A perfect dish for a warm spring or summer day!

The last entrée was the Snake River Farms Flank Steak. This steak was American wagyu beef, marinated and frilled medium rare with red wine gastrique, roasted poblanos and garlic with melt in your mouth mashed Yukon potatoes and seasonal veggies. We ‘enhanced’ our steak with sautéed garlic chili shrimp and definitely don’t regret that! This is a great entrée for those craving a steak that packs a lot of flavor and is garnished with amazing sides.

Of course, we couldn’t stop there so naturally dessert came next! We had their two classics: the Soon to be Famous Coconut Cream Cake and the Callebaut Chocolate Hazelnut Torte. I don’t think we can stress this enough – you have to try these desserts. The coconut cake is a coconut genoise cake filled with mascarpone-coconut cream and finished with a tasty tropical lilikoi sauce. 

And the chocolate torte is a layered flourless chocolate-ganache cake laced with hazelnuts and caramel. It’s also topped with a mascarpone-caramel cream. You would have no idea that this torte is flourless because it was so decadent! To finish it off they served us their Wild Sage Signature Espresso Martini which was a combination of fresh brewed espresso, Godiva liqueur, Grand Marnier, Tia Maria and vodka shaken, topped with cream and a house made chocolate truffle. Like seriously Wild Sage knows how to make every single item the best it could be.

Wild Sage has perfected their spring menu and everything else on it to a T. Not to mention that every single dish was so beautifully presented. Chef Connor has a talent for combining flavors and incorporating fresh ingredients in all their dishes all while making the food so photogenic.
